GENERAL MANAGER OF BAR OPERATIONS

GENERAL STATEMENT OF DUTIES
Under the supervision of the Director of Food and Beverage, the General Manager of Bar
Operations is responsible for the day-to-day operation of all bars located at Batavia
Downs Gaming. Key responsibilities include making necessary improvements to the
department while staying within budget, ensuring that employees are properly trained on
food preparation, communicating and understanding health standards, and minimizing
labor costs.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Supervise and direct all 34 Rush and Clubhouse bar and wait staff and assist in
    the supervision of all aspects of food service and operations in the 34 Rush and
    Clubhouse restaurants.
  • Responsible for proper training of all bar and alcohol-serving employees including
    mixing, pouring drinks and use of the Micros system. Train the wait staff in menu
    knowledge so that they understand all menu items and the point-of-sale system.
  • Keep bar coolers, beer coolers and liquor cabinets stocked, cleaned, and
    organized.
  • Book live entertainment for 34 Rush.
  • Ensure customers are served in accordance with state and local laws and
    WROTBC’s regulations regarding the service of alcohol, including ensuring
    customers are of legal drinking age by checking photo IDs and using proper
    judgment and, when necessary, refusing service to patrons who are intoxicated or
    disruptive.
  • Responsible for the interview process, hiring, training, scheduling, and discipline
    of all 34 Rush and Clubhouse staff.
  • Review and complete timecards for 34 Rush staff for payroll using the corporation’s
    online time-tracking system on a bi-weekly basis.
  • Gather comments, feedback, and other data about food and service quality;
    respond to customer complaints.
  • Responsible for upkeep in kitchen equipment.
  • Assist in inventory and food cost control and approve all invoices.
  • Assist in Food & Beverage budget preparation regarding all BDG bar activity.
  • In conjunction with the Marketing staff, plan promotions including daily drink
    specials in all bars and on the gaming floor.
  • Assist in the analysis of cost/revenues to ensure efficient bar operation.
  • Responsible for performing TIPS training for applicable Food & Beverage staff.
  • Perform other related duties as assigned.

REQUIRED KNOWLEDGE, SKILLS AND TRAINING

Strong supervisory and leadership skills with the ability to prioritize tasks and delegate
when appropriate. Knowledge of restaurant and bar functions and duties that are
required. Excellent interpersonal skills and the ability to remain calm when dealing with
unruly or argumentative patrons. A basic understanding of Microsoft Office Suite or
related software, as well as the ability to quickly learn point of sale software used by bars
and restaurants. TIPS Training certification preferred.

ACCEPTABLE TRAINING AND EXPERIENCE

A high school diploma or GED, plus five (5) years of experience in Restaurant
Management.

Must be approved for and maintain a valid Video Lottery Gaming Service Employee
license issued by the New York State Gaming Commission.

PHYSICAL REQUIREMENTS

This job operates both in a professional office environment and in a kitchen and
restaurant environment. This role routinely uses standard office equipment such as
computers, phones, photocopiers, filing cabinets, and fax machines. This is a sedentary
role approximately 50% of the time. This position requires the ability to lift or move up to
40 pounds at a time and bend, crawl, and climb stairs or ladders as necessary. The
person in this position must be able to talk and hear in order to ensure proper
communication.

ADDITIONAL REQUIREMENTS

Must be available to work nights, weekends, and on holidays.
